La burrata in pasta fillo con caponata di melanzana e stracciatella

INGREDIENTI:
- 1 Burratina
- 1 Foglio di pasta fillo
- 1/2 Melanzana
- q.b. Basilico fresco
- 40gr. Stracciatella fresca
- q.b. Pepe al mulinello
- 1 Spicchio di aglio
- q.b. Olio extra vergine di oliva
PROCEDIMENTO:
Adagiate la burratina su un foglio di pasta fillo, lo chiudete a fazzoletto e cuocete il tutto in forno per circa 8 minuti. Tagliate la melanzana a cubetti, conditela con olio, basilico fresco e aglio e cuocete in forno per 20 minuti circa.
Impiattate la melanzana con stracciatella intiepidita e la burratina calda in sfoglia croccante di pasta fillo.
